Chicken, halloumi & roasted vegetable kebabs with a lemon & thyme dressing

These beautiful, colourful kebabs look great on the BBQ and they’re packed full of flavour, too. A delicious option for your next get together. Why not get the kids involved and allow them to get creative making their own kebabs, too?

Diced Chicken

 

 

Ingredients

  • 2 medium courgettes
  • 1 large red onion
  • 2 large yellow peppers
  • 18 cherry tomatoes
  • 250g halloumi cheese, cut into chunks
  • 1tbsp olive oil
  • 2tbsp lemon juice
  • Fresh thyme leaves
  • 1/2 tsp Dijon mustard
  • 1 lime
  • 500g Diced Chicken

Method

Preheat the BBQ grill

Halve the courgettes lengthways and slice into cubes. Cut your peppers and the onions into cubes, and then thread your diced chicken, courgettes, peppers, onions, tomatoes and halloumi  chunks onto your skewers. Cover with tinfoil and set aside for grilling.

Now, to make your dressing. Place the olive oil, lemon juice, thyme, mustard and juice of a lime into a bowl and stir thoroughly and season.

Brush the dressing onto your skewers, ensuring an even coverage. Place on the BBQ and grill for 10mins, turning regularly. Check that the chicken is cooked through before serving. Grill until the cheese begins to melt and the veg is tender.
