The herbal flavours of Gin make it the perfect spirit for a whole host of refreshing cocktails and here at DD HQ we love the iconic Tom Collins but we’ve added a beautiful berry based twist – blueberries. It’d work with all sorts of berries though so, don’t be afraid to experiment!
Why not try
- 200g fresh blueberries
- 200g sugar
- 100ml gin
- 30ml fresh lemon juice
- 400ml chilled club soda
- Lemon slices (for serving)
In a medium saucepan bring the the blueberries, sugar and half a cup of water to the boil and stir until the sugar has dissolved.
Simmer for approximately 20 minutes or until the berries are nice and soft, stirring occasionally.
Let the blueberry mix cool before straining through a sieve into a large jug, making sure you squeeze out as much of the liquid as possible, throw the leftovers away.
Add the gin and lemon juice to the jug
Fill the jug to the top with ice and stir for a few minutes, now it’s ready to serve.
Pour into a glass filled with ice and top with club soda.
Finish with slices of lemon, fresh blueberries and enjoy!
