With BBQ season fast approaching, we love this simple yet oh so satisfying BBQ chicken recipe, using one of our favourite Welsh tipples – Barti Spiced. Try this mouthwatering BBQ recipe for yourself and be sure to save some Barti Ddu to toast your delicious dish!
- 8 chicken drumsticks, legs or thighs
- 6 tbsp Barti Spiced
- Handful of fresh mint, finely chopped
- 1 fresh lime, zest and juice
Put your chicken in a large bowl together with your fresh mint, Barti Spiced, lime zest and juice and a sprinkling of sugar and lightly season. Cover your bowl in clingfilm and leave to marinate for a minimum of 1 hour, ideally overnight.
When you’ve marinated your chicken, cook your chicken on the grill or BBQ. Cook on both sides until thoroughly cooked through and juices run clear. Baste your chicken in any left over marinade. Serve with a wedge of lime and a sprinkling of fresh mint – delicious.
